Blinis with Caviar

Key ingredients:

  • ¾ tsp sea salt

  • ½ tsp baking powder

  • 1 egg

  • 1 cup flour

  • 2 tbsp butter (1 tbsp melted)

  • ¾ cup + 2 tbsp milk

Accompaniments:

  • Hard-cooked eggs, finely chopped

  • Chives, minced

  • Crème fraîche or sour cream

  • Capers

  • Lemon wedges

Preparation steps for blinis:

  1. Mix dry ingredients:

    • In a medium bowl, whisk together all the dry ingredients (flour, salt, baking powder, etc.) until well combined.

  2. Combine Butter and Egg:

    • In a separate small bowl, whisk the melted butter with the egg until the mixture is smooth and uniform.

  3. Add Milk:

    • Gradually whisk the milk into the butter and egg mixture, ensuring it’s well blended.

  4. Combine Wet and Dry Ingredients:

    • Pour the wet mixture into the bowl with the dry ingredients. Stir until everything is just combined and the batter is smooth, with no visible lumps.

  5. Heat Skillet:

    • Melt the remaining butter in a skillet over medium heat. Make sure the butter coats the entire surface of the skillet.

  6. Cook Blinis:

    • Spoon about 1 tablespoon of batter into the hot skillet. Spread the batter slightly with the back of the spoon if necessary.

  7. Flip Blinis:

    • Cook until the edges are golden and bubbles form on the surface, roughly 2 minutes. Flip and cook the other side until golden brown.

  8. Prepare Accompaniments:

    • Chop the hard-cooked eggs and arrange in a small dish.

    • Finely mince the chives and place in another dish.

    • Serve the crème fraîche or sour cream in a bowl alongside the capers and lemon wedges.

  9. Serve and assemble:

    • Transfer the blinis to a serving plate. For each blini, add a dollop of crème fraîche, a generous spoonful of STURION Caviar, and sprinkle with minced chives. Offer the chopped eggs, capers, and lemon wedges as optional toppings to complement the luxurious flavors.
